Keep reading for my amazingly delicious banana bread recipe featuring Carrington Farms super healthy, super delicious products. I love baking and I love eating baked goods even more! Of course I am always trying to eat healthy so Im always on the look out for great tasting but healthy recipes. Keep reading for my Carrington Farms Coconut Banana bread. Great for breakfast, a snack, or a sweet dessert. And you cannot go wrong with T-fals great baking pans! I got to try their cookie sheets and LOVE them! They come in a variety of sizes and bake cookies and treats like a pro! I highly recommend them to all bakers, pro or novice.
I am a huge fan of Carrington Farms products, and for good reason, they carry a HUGE line of amazing coconut & flax products- both super healthy & super versatile. Flax can be used to top yogurt, granola, cereal and can be used in baking - check out my recipe below. Flax is super healthy, contains dietary fiber, is packed with omegas and contains protein.
Healthy Coconut Banana Bread Ingredients
- 1/2 cup sugar
- 3/4 cup honey
- 1/2 cup Carrington Farms Liquid Cooking Oil
- 2 eggs
- 4 ripe bananas, mashed (about 1 1/2 cups)
- 1/2 cup low fat buttermilk
- 1 tsp vanilla
- 1 1/4 whole wheat flour
- 1 cup white flour
- 1/4 cup Carrington Farms Organic Milled Flax Seeds
- 2 tsp baking powder
- 1/2 tsp salt (optional)
- 1/4 tsp baking soda
- 1/2 cup unsweetened coconut flakes (optional)
Pre-heat oven to 350 degrees. Spray 2 9x5 loaf pans with Carrington Farms Coconut Oil Cooking Spray. In a large mixing bowl mix together coconut oil, honey, and sugar. Stir in eggs until well combined. Add bananas, buttermilk, and vanilla, mix well. Add flours, flax, baking powder, salt, and baking soda. Mix until just barely combined. Fold in coconut flakes. Divide batter between the 2 loaf pans. Bake for 40-50 minute, until a toothpick comes out clean. Let cool & enjoy!
