Pineaple Zucchini Bread Recipe


Today's Recipe: I did my cooking yesterday and had some leftover pineapple and zucchini so I made diet pineapple zucchini bread. .

  • 1/2 cup eggbeaters
  • 1 cup sugar
  • 1 cup splenda
  • 1 cup unsweetened applesauce
  • 2 tsp vanilla
  • 2 cups whole wheat flour
  • 1 cup white flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups shredded zucchini
  • 8 oz crushed pineapple undrained
Mix all ingredients, adding zucchini and pineapple last. Spray 2 bread pans w/ Pam & bake at 350* for 60 to 70 minutes. Cool in pan 10 min before removing.

    I do love the cardio premix from DCA... I agree with the strength sections... i can't stand that band... and really... the strength sections aren't much. But the cardio really kicky my rear!!!

    Your zucchini bread sounds so good! I made some recently, too... still eating up the leftovers in the freezer :)

    I do the same thing with the applesauce! SO helpful! We never go through applesauce quickly... so it goes to total waste in the fridge otherwise!

    I just put the loaf in my feezer-Jay wont help me eat the bread...And Im a little slow and just discovered the individual apple sauce cups...
