Today's Recipe: Biscuit Pot Pie
(altered from this Betty Crocker recipe card)
Filling:
-12 oz bag of mixed frozen vegis
-12 oz bag of frozen broccoli
-3 TBS butter
-1/2 cup chopped onion
-3 TBS flour
2 cups chicken broth
-1 TBS chopped fresh or 1 tsp dried sage
-3-4 cups cubed cooked chicken or turkey breast
Biscuits
-4 slices turkey bacon cooked
-1 cup heart smart Bisquick
-1/2 cup fat free milk
-1/2 cup FF or 2% shredded cheddar cheese
Directions
1. heat oven to 400*. In a pot, melt butter over med heat. Add onion; cook about 2 minutes, stirring occasionally until tender. Beat in flour w/ wire whisk. Gradually beat in broth & sage. Reduce heat to med-low; cook 5 min, stirring occasionally, until sauce thickens. Stir all vegis and turkey into sauce. Spoon mixture into ungreased 2-quart casserole dish. 2. Place Crumble bacon in medium bowl. Add remaining biscuit ingredient; stir until blended. Spoon biscuit batter over top of turkey mixture. 3. Bake 25-40 minutes until biscuit crust is golden brown.
*this was really really easy and it tasted good. IT'S packed w/ vegis and lean protein. I'd say -pretty darn healthy & DH approved!

ReplyDeleteYou know, I've heard that Turkey bacon is worse for you than regular bacon. Not much of a bacon eater but I have an awesome recipe on my site for Baked Potato Soup that uses bacon, yum!
One way to increase your sense of investment in this issue is to learn how losing will reduce your risk of having some health problems that we all would like to avoid.
ReplyDeleteThe best thing you can do for your body is intake a balanced diet, no matter what you're eating. The food itself doesn't matter as much, as long as you're eating the right about of carbohydrates, protein, grains, dairy and vegetables.
