Easy & Lite Chicken Pot Pie Recipe



Today's Recipe: Biscuit Pot Pie
(altered from this Betty Crocker recipe card)
Filling:
-12 oz bag of mixed frozen vegis
-12 oz bag of frozen broccoli
-3 TBS butter
-1/2 cup chopped onion
-3 TBS flour
2 cups chicken broth
-1 TBS chopped fresh or 1 tsp dried sage
-3-4 cups cubed cooked chicken or turkey breast



Biscuits
-4 slices turkey bacon cooked
-1 cup heart smart Bisquick
-1/2 cup fat free milk
-1/2 cup FF or 2% shredded cheddar cheese

Directions
1. heat oven to 400*. In a pot, melt butter over med heat. Add onion; cook about 2 minutes, stirring occasionally until tender. Beat in flour w/ wire whisk. Gradually beat in broth & sage. Reduce heat to med-low; cook 5 min, stirring occasionally, until sauce thickens. Stir all vegis and turkey into sauce. Spoon mixture into ungreased 2-quart casserole dish. 2. Place Crumble bacon in medium bowl. Add remaining biscuit ingredient; stir until blended. Spoon biscuit batter over top of turkey mixture. 3. Bake 25-40 minutes until biscuit crust is golden brown.

*this was really really easy and it tasted good. IT'S packed w/ vegis and lean protein. I'd say -pretty darn healthy & DH approved!

    You know, I've heard that Turkey bacon is worse for you than regular bacon. Not much of a bacon eater but I have an awesome recipe on my site for Baked Potato Soup that uses bacon, yum!

  3. The best thing you can do for your body is intake a balanced diet, no matter what you're eating. The food itself doesn't matter as much, as long as you're eating the right about of carbohydrates, protein, grains, dairy and vegetables.
