I love to bake & cook but of course am always looking for healthier ways to enjoy my favorite treats. Keep reading for fun recipes! These recipes present a healthier, more nutritious way to serve families the traditional holiday favorites with an exciting twist!  I encourage you to try them and share with your readers—this is a great family activity and an easy way for kids to get involved in the kitchen.


Coconut Juice Hot Chocolate
Ingredients:
2 cans of Amy & Brian 17.5 oz Coconut Juice Without Pulp
2/3 cup cocoa powder
4 Tbsp maple syrup
1 tsp vanilla

Directions:
1.  In a pot over the stove, add all ingredients and turn heat on medium-low.
2.  Whisk ingredients together, quickly, while they warm. Once ingredients have dissolved heat to desired temperature and serve.

Coconut Juice-Infused Rice
Ingredients:
20 oz of Amy & Brian 17.5 oz Coconut Juice [With or Without Pulp]
1 tsp salt
3/4 tsp sugar
1 cup long grain white rice
3 Tbsp fresh cilantro, chopped

Directions:
1.  In a saucepan, combine Amy & Brian Coconut Juice, salt, and sugar. Bring to a boil. Add the rice, stir well, and reduce heat to medium-low. Cover and simmer undisturbed until the liquid is absorbed and the rice is fluffy, about 20-25 minutes. Remove from heat and let sit without stirring for 10 minutes.
2.  Fluff with a fork and add the cilantro. Adjust seasoning to taste. Serve hot!
